Ever wonder how the professionals process your deer? Well, it’s a lot different than field dressing a deer in the woods, where you have to worry more about contamination, having enough light to see, or in the worst-case scenario, the loss of your knife. In the cutting room of a processor, professional deer cleaners have more tools at their disposal—and years of skill wielding a blade.

Watch these five men race to complete their deer cleaning in as little time as possible. As always, speed by itself doesn’t necessarily mean a good job, and more time usually means more attention paid to the task at hand.
