Panfish Parmigiana Recipe

Summertime means plenty of panfish – bream and crappie –  and this yummy dish will please your family and guests.

Ingredients:

  • 1 pound panfish fillets
  • Salt and freshly-ground black pepper, to taste
  • 1 cup tomato sauce
  • 1/2-cup Parmesan cheese
  • 1 tablespoon butter, melted
  • Parsley sprigs

Preparation:

Place fish in a single layer in a baking dish large enough to hold them, and season with salt and pepper. Spread tomato sauce over the fillets. Sprinkle Parmesan cheese over the fillets, and drizzle butter evenly over the cheese. Cover loosely and microwave on 8 POWER for 5 – 8 minutes, until fish barely flakes. Remove from the oven, and cover with foil, shiny side down, for 5 minutes before serving. Garnish with parsley sprigs.

He was the chief photographer for Mannequins, Inc., a Birmingham modeling agency, for 11 years.

While serving as 2nd Vice President of the Alabama Wildlife Federation, Phillips was in charge of all press releases for the organization as well as serving as Chairman of Alabama's Big Buck Contest, which he founded more than 30 years ago. He also was president of the Alabama Sportsman's Association for three years.

Phillips is the recipient of a Certificate of Merit from the Governor of Alabama and the Department of Conservation for his work in the outdoor field. EDUCATION: B.S. degree from the University of West Alabama with a physical education major and a history minor.
