So, you got a bird on the ground – congratulations! – but now you need to gather all the good stuff to go in your famous wild turkey chili recipe. Below is a video that walks you through the entire process so you can make quick work of the bird and serve-up your favorite wild game dishes.

When dealing with wild game meat, I typically follow the simple rule of thumb: when in doubt, turn to the ‘MeatEater Fish and Game Cookbook: Recipes and Techniques for Every Hunter and Angler.’

However, if you haven’t yet picked up a copy (do it right now!!) another solution would be to head over to their YouTube channel. There, you can find many more videos like the one featured below, which features a method of butchering a wild turkey after the kill.

A couple takeaways from this video;

First, it helps tremendously to use a good, sharp knife. Mark Kenyon was using a Benchmade blade in the video above, and they have a wide assortment of knives tailor-made for the outdoors.

The second takeaway deals with the turkey skin. In the video, Mark removes it, but this is entirely up to you and your preferences. For some recipes, it might be beneficial to have the meat skinless, however you are sacrificing some delicious flavors by doing so..
