As a general rule, if it’s wild game and prepared by a chef who knows their way around the kitchen, count me in. But I know most people will turn green when they hear what Hunt Chef has prepared . . .

Coyote backstrap – yummmm?

Now, for what it’s worth, this coyote was said to have been harvested in southwestern Pennsylvania – in farm country – so maybe it was feeding on better food sources compared to others in different regions, but he claims the meat is tender and tasty. Are you up for a bite?
